Spanish omelet

This is so tasty and easy to make. I guess there are a million ways how to cook it but I keep it simple.

Cut and boil 4 potatoes in salty water for about 15 minutes. Chop and fry one onion in olive oil until the onion gets soft. Let everything get cold. Mix the potatoes, fried onion, salt, pepper and 4-5 eggs (depending on size). Fry a spoon of butter and put the mixture in the fryingpan for about 15 on a very low temperature.
Now the tricky part comes. Turn the omelette! I always tap the pan with a big plate and turn evrything upside down. You get it right? Fry the other side for a couple of minutes until it gets a nice color.

Buen provecho!
